Fresh Apple Cake

Dry Ingredients: In bowl and mix.                                          

                              3 cups flour

                              2 cups sugar

                              1 tsp baking soda

                              1/2 tsp salt

                              1 tsp cinnamon

Liquid Ingredients: Mix in a separate bowl

                                 1 cup oil

                                 1/2 cup water

                                 2 eggs

                                 2 tsp vanilla

Combine dry ingredients with liquid.  Add 3 cups apples cut in 1/2 inch cubes.  1 cup chopped nuts (pecans or walnuts preferred).  Mix pour into 9x13 greased and floured pan.  Bake at 350 degrees for 50 minutes or until toothpick inserted in center comes out clean.  When cooled sprinkle with confectioners sugar, if desired.

This cake is great for dessert or even breakfast.
